Chocolate 101

Chickadee Chocolate is Pacific Northwest grown and inspired. It is informed by both the terroir and changing seasons, as well as the abundance of new traditions and cultural diversity we enjoy as people living in and around Vancouver. Ingredients are sourced locally whenever possible, and we proudly use Cacao Barry chocolate and Avalon cream in all of our sweet treats.

    Getting the Best out
    of your Chickadee Chocolate Experience

    All of Chickadee’s chocolates and confections are made fresh and best enjoyed sooner rather than later!

    While firmer confections like barks and buttercrunch and cocoa mix easily have a half-year shelf life, treats like caramels, marshmallows, and fudges are optimal within 4 – 6 weeks. Filled bonbons are freshest and most flavourful within 2 – 4 weeks.

    Fear not — if you want to save your chocolate for a special occassion or give it as a gift, just wrap it well and put it in the freezer! Chickadee recommends a ziplock bag, an airtight tupperware, or double wrapping your box in clingfilm. Take your bonbons out of the freezer the evening before you want to enjoy or give, leave them wrapped tight, and simply unwrap when the chocolate comes up to room temperature (approximately 4 – 8 hours).


    Does chocolate go bad?

    Not really — however, even the best ganaches and confections do dry out bit by bit over time. Like a loaf of bread or a muffin left sitting on the counter for too long, a ganache-filled bonbon will lose its robust flavour and silky texture within a month of sitting at room temperature. This is why we recommend you enjoy your bonbons within two weeks for optimal freshness.
